我们的辣椒酱制作技艺为重庆市綦江区非物质文化遗产。我们选用源自贵州、石柱、云南等地海拔800米高山、无污染、绿色、天然无公害辣椒基地的辣椒，成熟度9层以上的辣椒经过多重工序严格发酵6个月以上，不仅风味独特，还完全保留了营养成分。 Our chili sauce making technique is the intangible cultural heritage of Chongqing Qijiang District. We select chilies from the pollution-free, green and natural chili base in the high mountains with an altitude of 800 meters in Shizhu, Guizhou, Yunnan and other places. The chilies with a maturity of 9 or more layers have been fermented strictly in multiple processes for more than 6 months, which not only have unique flavor, but also retain their nutrients completely.
